Good Oscar Eats

If you’re planning to spend a few hours this weekend watching Hollywood’s glam crowd walk the red carpet, treat yourself to some Oscar worthy appetizers and make a night of it.  You can keep yourself in the Slimdog camp by keeping the calories under control while not compromising good taste.  Here’s an example:  Instead of loads of processed, high fat cheese covering those fried tortilla chips on the nacho plate, make these simple substitutions.  Start with baked corn chips instead of fried (I like the blue ones) and pair them with a heart-healthy Avocado Salsa.  This recipe is derived from one endorsed by the American Heart Association, total calories per serving, just under 100.  You’ll need:  1 15.5 oz can no salt added black beans, rinsed and drained; 1 big cucumber, peeled (optional) and chopped; 2 medium ribs of celery, finely chopped; 1 green pepper, seeds and ribs discarded, finely chopped; 1/8 c. snipped fresh cilantro; fresh lime juice; 1/8 to 1/4 tsp crushed red pepper flakes; salt to taste; 3 large or 4 small avocados, peeled, pitted, and chopped.  In a medium bowl, stir together all but the avocados.  Using a rubber spatula, gently fold the avocados in.  Serve with the tortilla chips and enjoy the show!

    Hey, Joy — what ingredients are contained in the rubber spatula? The recipe sounded so darn healthy that I was sure you would suggest stirring with a bamboo branch!
